Cocktails At The Lobby Lounge

Much to the delight of seasoned tipplers, The Lobby Lounge unveils a cocktail menu meticulously crafted in collaboration with consulting award-winning mixologist Jesse Vida. This exciting foray into cocktails introduces a dynamic energy that runs through the property and positions The Lobby Lounge as the hub of conversation for the discerning.

The menu, comprising day and night cocktails that complement how the space evolves from dawn to dusk, champions the use of local spices and herbs such as cloves, cumin and star anise.

Royal Rosales

 

Each chapter on the menu is inspired by the hotel's neighbourhood, beginning with Sultan Gate Garden. This section gains inspiration from the iconic Gelam Trees and spice garden of the former Malay palace in Kampong Glam. Guests can start with Royal Rosales  — a concoction of Kyrö Gin, Nardini Bitter, strawberry grapefruit, lemon, absinthe, pink pepper and sea salt.

Meanwhile, drinks in the  Arab Street chapter pay homage to Singapore’s first-generation businesses; aptly named Flower Shop Sour, this spirit-forward drink is made of Chalong Bay Spiced Rum, kaffir leaf-infused Ceylon Arak, clove orange cordial, coconut cream, lemon, chamomile honey and orange bitters.  

 

Haji Paji

As the page turns, let us venture over to Haji Lane, the famed street known for its electrifying buzz. The street’s pulsating spirit inspired Haji Paji, an agave-based drink made of Tequila Ocho Plata, Herrencia Mezcal, cumin, grapefruit, lime, absinthe and soda, shaken in tribute to good times spent in the vibrant alley.

 Albert Food Centre, one of Singapore’s best hawker centres, is also spotlighted on the menu, with cocktails such as Tjendol Milk Punch, reminiscent of the chendol, a coconut-based iced dessert found in the hawker. The clear pandan-infused drink uses a meticulous milk-washing technique, lending a delicate silky texture bolstered by the comforting notes of coconut, gula melaka and lemon.

The journey ends at 80 Middle Road, home of InterContinental Singapore, with the Legacy Eighty  — a sophisticated blend of Bobby’s Gin, blue pea-infused Blanc Vermouth, Champagne, tamarind and orange bitters, as well as its smokier counterpart, Flaming Tightrope, featuring Nikka FTB, toasted rice, basil, chilli and soda. 

Serving these cocktails will be assistant manager and mixologist, Rhodora Amurao, who ensures each drink is shaken and stirred to perfection. She shares: “The new cocktail menu at The Lobby Lounge not only reflects the rich heritage of the Bugis and Bras Basah neighbourhoods, but is also an ode to the art of mixology. Aside from unique spice infusions, it is designed to engage the five senses of taste, smell, touch, sight, and sound — the last being the stories we get to tell through each drink.”
