On Sundays, guests are invited to indulge to their hearts’ content with the lavish international spread, anchored by authentic Italian fare and an abundance of premium pours to elevate your weekend dining experience.
 


At the heart of the brunch, discover the 18-months Prosciutto di Parma live station, where the delicate, nutty flavours of Italy’s finest cured ham are freshly sliced to order. Pizza lovers can savour artisanal creations fresh from the oven, such as the Cornicione Ripieno, a ricotta-stuffed crust layered with mozzarella, tomato sauce, and fresh basil; the comforting Calzone, filled with egg, mushroom, mozzarella, and basil; and the bold Sgombro, featuring mackerel with lemon ricotta, sundried tomatoes, caramelised onion, and melted mozzarella.


The live pasta station is a true showstopper. Delight in the rich Mezze Maniche alla Carbonara, prepared tableside in a Parmesan wheel with guanciale, pecorino Romano DOP, and a silky egg yolk sauce, or indulge in the decadent Risotto al Nero di Seppia, where mixed seafood is folded into acquerello rice with a luscious cuttlefish ink sauce.


From the carving station, savour perfectly roasted Tagliata di Picanha - succulent Angus round cap paired with fingerling potatoes, roasted asparagus, cherry tomatoes on the vine, and a green peppercorn sauce. For a smoky touch, the St. Louis-style Barbecued Pork Ribs bring hearty flavours, glazed with tangy barbecue sauce and served with baked cherry tomatoes.

 



Italian specialities take centre stage with dishes such as Dentice al Forno, an oven-roasted red snapper enriched with potatoes and olive gravy, and the classic Porchetta, Italian-style roasted stuffed pork belly complemented by a Peroni beer gravy.

Highlights include Wok-fried Tiger Prawns with Cereal, tossed with curry leaves, egg floss, and chilli padi for a sweet-spicy crunch; pillowy Takoyaki, topped with tonkatsu sauce, Japanese mayonnaise, and bonito flakes; Nasi Goreng Istimewa, a fragrant wok-fried rice dish with sambal and fried shallots; and Stir-fried Iberico Pork Ribs with Coffee Sauce, a sweet-savory creation garnished with sesame seeds.

Moving into warm indulgence, savour the buttery richness of the Lobster and Foie Gras Sando, or delight in the refined decadence of the InterContinental Benedict Royale, a festive twist on the classic brunch favourite. 

Italian inspirations shine through the creamy Chorizo e Burrata and the theatrical Risotto alla Milanese con Ossobuco, stirred to golden perfection in LUCE’s signature parmesan cheese wheel. Heartier fare takes centre stage with the flaky, golden-crusted Classic Beef Wellington and the succulent Tacchino Arrosto, turkey roasted with herbs and festive spices.
